Debbie Hill's Lemon Blueberry Cheesecake!

40 NILLA Wafers, crushed (about 1-1/2 cups)
1 cup plus 3 Tbsp. sugar, divided
3 Tbsp. butter or margarine, melted
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
2 Tbsp. flour
1 cup Sour Cream
4 eggs
1 pkg. (3.4 oz.) JELL-O Lemon Flavor Instant Pudding
1 pkg. (16 oz.) frozen blueberries, thawed, drained and divided
2 cups thawed COOL WHIP Whipped Topping

HEAT oven to 325°F.

MIX wafer crumbs, 3 Tbsp. sugar and butter; press onto bottom of 13x9-inch pan. Bake 10 min.

BEAT cream cheese, remaining sugar and flour in large bowl with mixer until well blended. Add sour cream; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Stir in dry pudding mix until well blended. Gently stir in 1cup berries.

BAKE 1 hour or until almost set. (Center will still be jiggly.) Cool completely. Refrigerate 4 hours. Top cheesecake with COOL WHIP and remaining berries just before serving.

It was a wonderful evening and the food was great! Its so much fun getting together with all the sisters and having a chance to be lifted up and simply enjoy time together. One announcement that Sister Beck made was that the title of "Home, Family, and Personal Enrichment" is no longer! It will simply be called, "Relief Society Activities". That is a lot easier to swallow, but I just got used to calling it "Enrichment"! Please check out the talks when you have some time, they are always uplifting and motivating.

CHOCOHOTOPOTS

YUMMY! This recipe was demonstrated by Debbie Norton at Enrichment last night!
It was so chocolatey and gooey and really great! Thanks Debbie!

1 stick + 1 TBL real butter
4 ounces Bakers semisweet chocolate
2 eggs
3/4 C superfine sugar (regular sugar is ok)
3 TBL flour
1/4 tsp mint extract (optional, only if you like mint and chocolate)

4 (2/3/ to 1 C capacity) ramekins OR 2 (2C capacity) ramekins (baking dish)

In Microwave or over a double boiler melt the chocolate and the butter
(Use the extra 1TBL of butter to butter the ramekins

Melt it slowly 30 seconds at a time to it wont burn

In another bowl, mix the eggs, sugar, and flour with a hand whisk. Beat in the cooled chocolate mixture. Divide the mixtures between the buttered ramekins. Bake for 20 minutes at 400 degrees. Do not over bake. They are done when the top begins to crack, underneath will be gooey. Eat directly out of ramekin or invert on a plate. Can be served warm and its really great with vanilla ice cream and/or strawberries, raspberries. Very rich, yummy treat!

Marshmallow four layer bars

This was served at FHE in the park a couple of weeks ago!

1 pkg chocolate or yellow cake mix
1/4 c margarine melted
1/4 c water
1 c m&m's of course I used more...
1/2 c chopped nuts
3 c mini marshmallows

Mix Cake mis, margarine and water, until blended. Pat into 9x13 greased pan and bake 20-22 min at 375. Layer marshmallows, candies and nuts over crust and bake 2-3 min till marshmallows begin to melt. Cool and cut into bars

Lemon Fluff!

This was served at our Visiting Teaching Conference--yummy!

1- 6 oz pkg lemon jello
3 c boiling water
1 pinch of salt
1 1/2 C sugar
1 t. lemon extract
lemon zest and juice of one lemon
1 can evaporated milk (highly chilled)

Mix everything but the evaporated milk together and chill mixture in the fridge until syrupy.While setting up make the crust by mixing
1/4 c sugar
1 stick of melted butter
26 squares of crushed graham crackers
press into 9x13 pan and cook for 10 mins at 375--(or buy 2 ready made crusts!)

In seperate bowl whip the evaporated milk with beaters until fluffy like whipped cream. Fold lemon mixture in and pour over crust. Refridgerate for four house and garnish with spearmint leaves. A very light cool summery dessert

The Zip Codes are different, its not a typo! I know they would love to have a card or something, especially Norma, she didn't get to say goodbye to anyone and her health is really failing so it would be nice!

Sisters! I am putting plug in for a great book! I am so anxious to get it but haven't yet, this book is by Gerald Lund who wrote the Work and the Glory series. This book is about the Hole-in-the-Rock expedition which is down in southern Utah. My father who lives in Escalante is very close to the Hole-in-the-Rock. He has done much research on the whole valley and even written a book on the history, so he is a expert on the Hole-in-the-Rock. Gerald Lund came down and stayed with them several times while writing this book and credits my father Jerry C. Roundy in his book! I am a proud daughter that is gloating! KSL came down a few weeks ago to interview my Dad and also Gerald Lund because they are doing a documentary that will be broadcast between conference sessions this coming conference. I wanted to be sure to share that all with you so that you can watch! I am super excited about it! My Dad is also building a big museum there in Escalante all to honor the Hole-in-the-Rock expedition. The church donated the land and he has been given many donations from UDOT and other sources to complete the project. Hopefully groundbreaking will be soon. Just thought I would pass that along!

Wow!! It's been awhile since we've blogged...must mean that we've been B-U-S-Y!!! Can't even remember everything we've done...just know its been a blur of activity & its picked up speed since summer began!!

Summer means family vacations, weddings & lots of fun, fun, fun!!

Hoori Poukshirazi entered the waters of baptism on Saturday, July 9th, 2010...and was confirmed Sunday, July 11, 2010...please take some time to extend a hand of fellowship to her...she has an amazing spirit and we are so excited to have her join us in Relief Society!!


Congratulations to Emilio Torres who was just married to Delia Trujillo on Saturday, July 10, 2010!! They are a beautiful young couple...and we wish them every happiness!!


We know many of you are on vacation right now...if you would like to share any pics of recent trips we'd be thrilled to add them to our blog!!

Upcoming activities: Ward "Picnic in the Park" Monday, July 12, 2010 at 5:00pm...catered BBQ dinner...Meet by the volleyball courts...bring your own chairs &/or a blanket...a few tables will be set up for those unable to sit on the ground...it promises to be an amazing night!!


JUST A REMINDER....THE SAN DIEGO TEMPLE IS STILL OPEN AND OPERATING DURING ITS CURRENT CLEANING....MANY HAVE INQUIRED IF IT IS OPEN DUE TO THE SCAFFOLDING SET UP AROUND THE OUTSIDE...IT WILL BE CLOSED JULY 26- AUGUST 9, 2010...SO GET THOSE FAMILY NAMES & HEAD DOWN TO THE TEMPLE NOW!!!
